Well I'm here again - just been to the sales and finally invested in a pasta maker - will soon be making homemade ravioli and when my vegs grow will fill it with those BUT can't find durum flour anywhere - really struggling
Local markets haven't got it, supermarkets don't have it and barring ordering enough to feed Italy from an organic flour website I'm stuck
Can I use an alternative??
Help! I need to eat!

I have always used plain (just, only as it is!) plain flour when I make paste and it is OK and everybody eats it. It may not be up to Italian standard (who knows) but is suits us.
My feeling would be to give what you have a go and experiment

Bread flour can also be used, on the side of waitrose strong canadian and bread flour it has a recipe for making pasta. i have not had much luck with it though, but I have a cheap plastic pasta machine, keep meaning to try again and knead it a bit more, (as suggested by Nev/wombat). There is another string on this forum somewhere about pasta making that might help.
