i would second that about basket weaving, something i have longed to try for ages.
For us in new zealand, there probably isn't enough to run a course, but how about a get together to share skills, i need to make a solar dryer, i have the plans, but just not quite sure how to start it, i can sew, hand and machine if that is a skill someone wants and i can turn wood, i am not expert, but could teach the basics.
and if anyone can help me make a gate that would be wonderful, just a small gate about a metre accross i have the timber and hinges, but again, am not sure where to start.

I was just thinking about this thread, rather than have specific ish courses could it be better for those that live close to each other to share skills for free? I would be quite happy to go on a wild food walk with anyone and teach them what I have learnt.
Making solar ovens/driers could easily be done too, just a sunny (ish) day and the materials would do the job.
