I tried pickling beetroot last year.

My advice is not to use Asda's cheapest vinegar. It tasted rough, and after a few weeks the beet slices started to grow white scummy stuff and started to bubble as if fermenting.

I'll have a scout around in my recipe library! Yep, I'll say library, I have tonnes of recipes and stuff.

Give me a day or so...if not remind me! Got some good tried and tested recipes for tomato pickles etc. (I am sure you could incoporate a couple of courgettes in there)
If in doubt ~ use a hammer!

I made the pickled spicey green beans from a recipe on this site and it was the best pickle I have ever tasted even though it sounds awful...try it if you have a glut of runner beans, also from a recipe on here cucumber chutney is great , again I had a glut. I have a good recipe for green tomato chutney which I will post here if you want
