Dream allotment/food garden

What would your dream allotment/food growing garden be like? We're going to need to establish a new kitchen garden at some point in the next few years (planning on planting a coppice which will shade out the current plot), what should I plan on doing with it, and what should I be looking for when deciding where to put it (we have a 5 acre field at the back of the house, it's going somewhere in there).
