I was under the impression that Raspberries would wrap themselves around my picket fence, but they seem to just be aiming for the sky, are they just reaching for more light, waiting to extend outwards, or are they generaly poles?
In addition, I have a few Raspberries and a Tayberry that get very little light and are as a consequence tiny, will I be ok digging these up and replanting come autumn?  I wont be damaging too many roots or anything will I?

No, raspberries don't climb like blackberries, they just have straight(ish) canes.
They will be fine to move when they are dormant and as they are shallow rooted you can dig up a reasonable amount of roots to make for a quick recovery.

Raspberry supports: 
2 rows of wires five feet high and 18 inches to 2 feet apart. Just leave any canes that grow within the wires but discard strays. No need to tie them as they are enclosed.

I wonder where I got the idea they behaved like blackberrys from, can they be "trained"?  I suppose not because they die off after fruiting.

I grow mine like that, Minesapint, because I found they just do not grow in a nice little row like the textbooks say!
They aren't that shallow rooted either - I have dug down about 1 foot trying to remove the roots that had spread all through my strawberries and they are everywhere!
