Once horseradish is established you can dig up a root at any time of the year.
It is one of the dock family so any small pieces of root that you leave in the ground will grow a new plant.
Hope you thought of that when you planted it as once you have horseradish it's a job to get rid of (like mint)

If you planted it this year, I should dig up one and see if the root is big enough to be usable. When they are big enough just dig up one when you need one and leave the rest it situ.

I know they are quite rampant but to be honest I need more robust things as slugs eat everthing else

I am trying to get my paws on some for here, I love the stuff and have enough space o not worry if it goes rampant.
Opinionated but harmless
