I made this last night and its smashing.... I din.t add the cream as I don't liked creamed soups ...
2oz butter.
1lb 6oz ish of parsnips, peeled (if you want)and chopped.
2 tbsp of honey.
1 3/4 pints chicken or veg stock.
4 tbsp of double crem.
2 tbsp of parsley ... I didn't add that much.
Preheat oven to 200C or 400F, gas mark 6,
Melt the butter in oven proof dish.
Add parsnips making sure they are coated with the butter.
Roast for 30-35 mins, stirring once.
Stir in the honey and cook for a firther 10 mins.
Remove dish from oven add the stock and bring to the boil on the hob and simmer for 10 mins.
Allow to cool a little for safety and blend till smooth.
Stir in the cream if using and gently heat. Use parsley to garnish I added mine while in the pan can't be doing with this fancy garnishing business. Serve with crusty bread if your lucky or rice cakes like me if your not. oh and season with salt and pepper to your taste.

That sounds lovely!
Parsnips are quite hard to come by in France and I'm already on the lookout for some for Xmas dinner. If I do find some(and they are a bit like buses here, none at all or kilos of them) I'll try this soup at the same time.

I am quite shocked about the folks not having parsnips a friend in USA doesn't get them... also been told by a friend in France that she doesn't get them either. giggles at least we know what to take when visiting friends in France ...
