Once it goes to seed, you will find the leaves to tough and too hot to be worth eating. Let it go to seed and either collect the seed and sow when and where you want it or just let it self-seed where it is.
If mine goes to flower I just let it self seed - I think I read somewhere that the leaves are a bit bitter after they've flowered but I could be thinking of something else
