their about - dryads saddle i picked two weeks ago from tree to toast and st georges mushrooms from last weekend - all very tasty too. both found while walking the dogs - never seem to get anything when i'm looking for it

That is quite a haul. I have never tried them, but have seen them periodically. Where I live now is not good mushroom country, and I have to drive many miles to get into a good area, but I do so periodically in the Spring for Morels and slightly later Oysters,and in the Fall for whatever appears.

i keep finding allsorts of mushrooms, i get a good picture then trawl through my book to find out all those ive found are inedible. :-( wouldnt risk eating any ive found though, even if i was sure they were safe. still i enjoy finding them photographing them and finding all about them :-)

Nice haul R&C. Have been keping an eye out for Dryads but no luck this year. Did find a few rings of St Georges though and also a decent Chicken of the Woods. Enough on it to make a lovely risotto plus a good serving for the freezer.

Only ever once found a chicken of the woods and been looking without sucess for another ever since. - That looks a young one - not fully grown but i bet it was tender!! - We tried making nuggets with ours and they really were like chicken nuggets. The Dryads Saddle is related so we did the same with some of that as it was so large we were able to try it several different ways - wasn't half bad either!!

You're right, the CoW was still a juvenile at just over a week old (been keeping my eye on it). It had a cut weight of 1.6kg and was very tender. Personally I find eating the really soft flesh close to the very outer edge causes me to throw up so I tend to err on the side of caution when trimming it away.
Those Dryad pieces you cooked as nuggets do look rather good. I'll keep that recipe in the memory bank for future finds :thumbleft:

Your welcome Carltonian man. it was just rolled in beaten egg and breadcrumbs then shallow fried, nice cold with a dip.

Today was a St Georges mushroom day from the same spot we visited a week back and we did a risotto, insired by your pic with some nuts thrown in as well - very very nice. Trouble was when we found them I said to Carol we'd do a risotto which she thought was a good idea. I kind of assumed she was doing it and she thought i was - at 6.30 we realised neither of us had ever made a risotto before. Cook on the Wildside book was quickly dug out and i have to say it was a great success.
