I do have one that I nicked from somewhere that's very similar to this one but instead of sprinkling the top with sugar and cinnamon you mix an egg with soft butter and sugar and spread that over the top then liberally sprinkle with dessicated coconut.

Well yes I do that (or similar) only the apple is cut into slices and laid at the BOTTOM of the cake tin and the sponge on top.
Somewhere in this house is a newspaper clipping with the most divine apple and fresh ginger cake recipe which is absolutely to die for, but I can't find it and I'm soooooooo cross about it!

I'm cooking and stewing apples galore too and a few days ago I made pickled/braised red cabbage, which used up a few apples! The recipe I used is this one which is more the traditional one I was searching for - but do it on the hob on a very low heat for 1- 1.5 hours according to how crunchy or soft you want it.

And then apple, elderberry and mincemeat crumble, which lifts crumble into a whole new world. My hubby keeps asking what I did with the crumble topping this time as it's the best ever - I've told him it's just cos it's got blobs of mincemeat underneath it (he hadn't actually noticed, just noticed it tasted different/better
