Re: Bread Pudding
I love this too.
My "recipe" though does not have the eggs in it, and I add some plain flour to dry it up a bit, and use Suet and not butter, but apart from that I bet it tastes the same. Same source too, my Gran.

No I won't use a smiley because I've decided to turn into Boboff, as he's turned all nice all of a sudden. Grumble grumble.

Re: Bread Pudding
I haven't had this since school, and whilst school dinners' main course are not memorable for anything other than their
ness, the puds were great and this was one of my faves!
Trouble is I never have any stale bread!

Re: Bread Pudding
It's nice everyone follows a family recipe. I always copy my mum and soak the bread in cold black tea before mixing everything else in. I wonder what it would be like if you soaked the bread in ale first...?
Re: Bread Pudding
Well it's nice if you use cider and a shot of calvados, but I've not tried ale.The possibiities seem endless, what a nice thing to ponder in February.
Re: Bread Pudding
My mum soaked the bread in milk and didn't use eggs. She also sprinkled the surface with sugar before baking and this set into a caramelly crust. (Wiping the drool from my chin as I think about it.)

Re: Bread Pudding
I use eggs if I have loads, olive oil if I have no butter or marge or suet, add orange or lemon peel and a little juice to the mix, and sprinkle the top with castor sugar (or granulated or brown!!) and cinnamon to make a nice crispy caramelised crust. My OH likes it whatever I put in it..luckily

Re: Bread Pudding
Thanks for that. I thought I might have to crumble it up first but then it might be too gloopy to hold the pudding together. I can make a nice bread and butter pud with stale baguette - both sweet and savoury versions.
Re: Bread Pudding
it can get a bit gloopy, but it´s amazing how much milk our bread will absorb! my kids liked it very moist, but you could always add a bit of flour for a drier consistency.
Might just haveto experiment a bit....

Dear Mrs Moustoir,
Never tried a savoury version. What do you put in it?

Re: Bread Pudding
Following on from this thread I made some yesterday. I used Eggs this time and added some Porridge Oats as well. It was really nice, and not so different from the previous recipe.
