Green tomato chutney

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Green tomato chutney

Just thought I'd share this here as it is quite possibly the yummiest thing ever, we got through a whole jar a couple of hours after making it :oops: .

500g green tomatoes
500g red onion
250g sultanas
250g soft light brown sugar
2 tbsp salt
1 tsp cayenne pepper
1 tsp cardamom pods (skins peeled off, so just using the dark seeds inside)
500ml malt vinegar

Roughly chop everything up, put in a heavy bottomed pan, bring to the boil, then simmer/bubble lidless for about an hour until it's a gloopy brown consistency, transfer to sterilised jars (but you already know that part :salute: )
