Two small pumpkins were converted into juice. The outer rinds were incorporated. The seeds and centre mush was discarded.I chose small pumpkins, but see no reason why larger could not be used.
Method: Cut the pumpkin into small pieces, boil until soft, beat into a mash with the hand blender, put through a mechanical strainer. The juice was then Pressure Canned at 15 PSI for 15 minutes for long term storage at room temperature. Six litres of juice was obtained from the two pumpkins.
In N.A. pumpkins are used only for pies or jack-O-lanterns at Halloween. After studying the beneficial nutrition value of pumpkins, I decided to experiment.The juice is pleasant to drink. Just another vegetable for consumption and variety, and readily available, and easy to grow in my area.

I'd have been tempted to leave the seeds in there, Durgan. You're milling it anyway, and the seeds are highly nutritious.

Pumpkin seeds can be fine, but it often depends upon the pumpkin. They can be a bit gritty. The juice is excellent, slightly sweet and pumpkins are readily available in season in this area.MKG wrote:I'd have been tempted to leave the seeds in there, Durgan. I am awaiting the influx of fresh cranberries and will juice a few pounds. They arrive usually in December and are a garnish for turkey, the traditional Christmas dinner.

Why not try soup, roasted pumpkin, curried pumpkin, goodness me pumpkin can be used in SOOOOOOOO many ways it isn't true, or even .... shock horror gasp..... pumpkin pie can be eaten at ANY time of the year! And even better is pastryless pie with walnut crumble topping on it!!!

I live with my dog, Ginny, and am a bit lazy,so watch carefully what I eat. I must keep my girlish shape! Also, don't forget that my canned juices are for long term storage or rather off season use. Added sugar has been abolished. There is no sugar in the house except for some molasses, which is used for cooking beans.
I started using these juices this year in earnest. I have lost 17 pound over about the last three months, from 207 pounds to 190 and never even noticed. I want to be 185 pounds. This weight loss is attributed to a change in my diet.
I eat traditional food on occasion, since all food is acceptable to my palate. That said, I am acutely aware of the obesity epidemic, and the general ill health of people as they age. This is attributed to our diet to a large degree. Not the only issue, but one worth addressing. You might say I am experimenting and am a guinea pig or lab rat.

Ah I see. I always have pureed frozen pumpkin in my freezer for pumpkin pie at any time of the year - but don't make it as much as I'd like for health reasons too! I suppose boiled pumpkin is not very appealing so thinking about it most of the dishes I do with pumpkin or butternut squash do tend to be on the fattening side except for soup.
