Yes - definitely roasted. It's what parsnips were created for. Unlike GA, I find cutting them into fingers annoyingly wasteful (those crispy black end-bits really are inedible). Chop them into roast-potato-sized chunks and they'll cook, unsurprisingly, at about the same rate as roast potatoes. Drizzle a little honey over them for the last ten minutes of cooking and you have heaven on a stick. Without the stick, of course.

Definitely do the above,but if you've got any left over,peel and dice a coupe of pounds(cut out the woody bit if they're big)boil well in a litre or two of vegetable stock till they're nice and soft.Then chuck the whole lot into a blitzer,or use a hand-held one,and you'll beleft witha thick but smooth soup.Chuck it all back in the pan,warm through,then add acouple of dessert spoons of curry powder\dollops of paste,and season to taste.
