Having recently discovered the impressive size of the mint plant in my garden, I just started a test gallon of a mint ale, made to Hugh Fearnley-Whittingstalls nettle beer recipe, substituting mint leaves for nettles.
Have read mixed reviews of mint homebrew so decided to try it myself. May ferment some longer, aim for a more wine-like product.
Will keep you updated :)

made a mint ale last year and this year
very light and refreshing
and now got a mint wine on the go that is tasting pretty ok but still fermenting at the monment

Mint cordial and creme de menthe are the only mint drinks I've tried so far. I would have thought that any recipe for (lemon) balm would probably convert well to mint - making an adjustment to allow for the freedom with which mint gives up its flavour.
