nettle pasta!

Post: # 101315Post red »

used the nettles left over from making nettle beer (my recipe has no ginger in it.. just some lemon peel which I picked out) to make nettle spaghetti!

it worked.. and looked splendid with a nice red tomato sauce..

Nice colour! I take it you have a pasta machine? Or did you cut them all by hand... :?

yes pretty much - tbh if you really really thought about it you could pick up something nettle flavoured about it.. but once my tomato sauce went on top.. it just tasted like pasta - nice though.

ooo I bet wild garlic pasta would be worth a go....

This looks great, and very timely as making pasta is one of those things I have up my sleeve for a half term activity. Being me there's a stupid question - at which stage and how do/would you add the nettles/wild garlic?

Thanks :flower:

I haven't tried wild garlic yet - but plan to!

re nettles.. they need to be cooked first and then squeezed dry, then added to the flour before the egg goes in. I did this bit in the food processor for ease..
