Dandelion cordial

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Dandelion Jelly

Approx 400 dandelion heads
750mls of boiling water
1kg of preserving sugar
Juice of 1 lemon

Pick the dandelions when they are in full flower and dry. Carefully pull off the petals. It is best to pick a few at a time, de-petal them and then pick some more as this is rather time consuming and they wilt quite quickly. Better still, get an army of small children to do the picking for you. 400 flowers should give you about 1 litre of petals. Place these in a pan and cover with boiling water. Bring back to boil, then cool and then leave overnight in the fridge to infuse. The next day strain the liquid into a pan and discard the petals. Heat to boiling point, add the sugar and lemon juice. Stir to dissolve the sugar, bring back to boil then hard boil for 1 minute. Skim off any surface scum and pour into hot, sterilised jam jars. Cover straight away or when totally cold. Makes 5 jars.

Thanks GR... I'll see how the cordial goes (I have the heads steeping just now) :flower:

Can I ask - why do you need the remove the petals? is it just the way that you do it, or is their a specific reason? Seems very time consuming.

The green bits give the jelly/cordial/jam a too bitter flavour. It is time consumming so best done sitting in the sun with some good music to listen to and something alcololic to drink :wink:
