Pizza doesn't have to be loaded with cheese to be scrummy.

Had this for my dinner last night ....... crispy thin crust base with polena for extra crunch and linseeds and garlic ..... topped with garlic-herb aioli, mushrooms and caremalised onion and garlic.

Runners up .... mushroom and red pepper with tofu mix and mushroom and black olive with tofu mix

These look delicious!

How much polenta do you add to your dough?

My kids rave about my homemade pizza dough but I don't make it too often these days. We usually have to negotiate whether the dough is thin or thick as everyone in the family has (ahem) "differing requirements".

I made pizza yesterday and I had pesto as the base sauce, then leeks, spring onions, garlic, sweetcorn, peppers and onions, then drizzled (well, blobbed) some tomato sauce on top and a trickle of some oil from a jar of dried tomatoes. Yum! No cheese either (am recently turned vegan), and I definitely noticed a positive difference. Mmmmm pizza!

Shame I don't have the photos to show. But Lady Willow's pizzas are rather better presented than mine!
