i used up all my rocket before it all got too big (i like the leaves best when they are really young) and made my first batch of rocket pesto... i did go a little wild with the garlic though :? good if you want to improve your health, not so good if you are a vampire i guess!!

does anybody have any yummy pesto recipes that they can divulge? i wont take ALL the credit of course :geek:

Hey TG,

I've got some Rocket coming up (I thought they were weeds at first but wasn't sure so left them alone!) I love pesto but have never made it - can you divulge your recipe?

here we go Jobi1canobi

50g (2oz) rocket leaves
1 garlic clove
15ml (1tbsp) capers. rinsed and drained
15g parmesan cheese, freshly grated
15ml (1tbsp)chopped fresh parsley
15g (1/2oz)pine nuts, toasted
75ml (5tbsp)extra virgin olive oil
salt and pepper

1. Roughly chop the rocket and place in a mortar, blender of food processor with the garlic, capers, cheese, parsley amd pine nuts. Work to a fairly smooth paste. 2. Stir in the olive oil and season to serve.

* i added a bunch off olives that i had on their way out and it worked quite nicely :S *
