Converting dry weight to canned weight

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Converting dry weight to canned weight

Sorry, really unhelpful title.

I tend to buy all me beans dried, so when I go to use a recipe that calls for eg a 400g tin of chickpeas, I have to make a guess at how many dry chickpeas that equates to. I don't follow recipes religiously, but I do find that for some proportions make a fair bit of difference.

Does anyone know of a ready reckoner or an easy way of working it out?

I use a mix of aduki, kidney, haricot etc for soups and caseroles and use an american cup as the measure for a tin. I just went and weiged how much this is and it's 200gm

Had a google to see if I could find something more acurate = couldn't find a chart but found this recipe http://www.veggies.org.uk/recipes/main/tagine.rtf for 15 people which uses 3 tins chickpeas or 600 gms! So it checks out :cheers: 1 tin = 200gm

200g dry weight? That must be what the weight on the tin refers to then, unless I've completely misunderstood which is always possible as I don't really do numbers.

My Biona can says 400g followed by 265 drained weight.

I would be interested if 200g dry/uncooked does weigh 265 drained/cooked

Rose Elliott gives a conversion in one of her books, I'll dig it out.

When I cook up big batches of dried pulses, I always freeze them in portions equal to two cans in case I'm following a recipe, though more usually I make it up as I go along!

I somehow doubt it. Dried peas/beans take up a lot of water when they soak, and more during cooking - just watch the chickpeas grow in the pot! In fact, next time I soak something I shall weigh before and after; that's the easiest way of finding out.

Here are Rosie's dried and canned bean equivalents: 115g (4oz) dried beans = 425g can of beans, which when drained, weighs 300g (10oz).

Yep - my experiment comes up with roughly the same: 100g dried chickpeas converted to 260g cooked.
