Re: Help steamer question
Are you using a bamboo steamer? If so use some cooking parchment as a liner before putting your dim sum in. Or you could use large cabbage leaves instead.
Growing old is much better then the alternative!

Dim Sum: http://en.wikipedia.org/wiki/Dim_sum
We have several bamboo steamers, they're great and we use them quite alot as we live Chinese food quite a bit here!
My OH can't live without Custard Buns (Steamed bun with a custard / coconut filling) I swear they have crack in them and they are a little too addictive

Re: Help steamer question
Dim Sum is a style of Cantonese cuisine which comes mainly in the form of steamed and fried dumplings.
The steaming is traditionally done in a bamboo steamer. These are made from seasoned bamboo which is extremely tough. They are in the form of a stack of round boxes with slatted bamboo "floors" between each box. This is topped with a tight fitting woven bamboo lid. The food is placed on parchment or cabbage leaves to stop it sticking or passing flavours directly into the bamboo and then placed on the "floors". The steamer, tightly lidded, is then placed in a wok with water in the bottom. The steam from this water as it boils cooks the dim sum.
Lovely!
