You are right - I don't like those factory made buns, either. That book is another one I've lent my boss (does it seem like I'm trying to convert him? - what, me? - never... :wink: ). After he'd read it he asked - where do you get your bread flour from?

Unfortunately I've not found a local-ish supplier yet. In an way it's not that strange; northern Scotland is not exactly wheat growing country, although some is produced around here. Golspie Mill (up north) has all you could wish for, but is not easily available. I mostly buy my flour at the Newton Dee shop, they pack their own wholemeal flour in 2.5 kg bags - always meant to ask if they grind that themselves, too - they have a bakery, so it might well be "home-ground". Where it's grown, I don't know, except that it's UK. Otherwise I buy Dove's Farm.
