Great cheese scones

Post: # 129315Post Green Aura »

We've been very busy all morning removing an old shower. Come lunchtime we realised we'd not made any bread!

Quick Google and I found a recipe for quick cheese scones.
I doctored the recipe a bit and it's amazing - the thing I always dislike about cheese scones is that they're not cheesy enough. No such problem with these.

So here's my version, that I'm calling Very cheese scones

200g wholemeal flour
1 tsp baking powder
1 tsp mustard powder
1 tsp paprika
s+p
200g cheese of choice
milk of choice

Put flour and all other dry ingredients into a bowl and mix.
Grate cheese into flour mix and stir in thoroughly.
Add sufficient milk to make dough.
Chill for 20 mins.
Heat oven to 220oC.
Roll into about 8-10 balls, flatten and put on floured baking sheet (don't overwork it or you'll get tough scones).
Bake until cooked through and golden brown on the top (about 10 mins).

Serve warm with butter.

Easily veganised with cheezley type stuff.
Need hard cheese, like cheddar, but otherwise choice is only limited by no. of cheeses you can find.
You can even add tomato puree to the milk and/ or change the spices as desired.

I do hope you mean minced garlic lol!

I frequently make cheese scone to go with soup. I make three or four batches and bung 'em in the freezer. You can add olives and sun dried toms etc and I usually stick some chopped onion in too.

I made this again the other day with Gruyere. I only had a small piece left so I cubed a small lump of Brie (basically all the rind) and added that too. Oh my, they were so good - the gruyere gave a general cheesy taste with surprise bursts of the brie. You couldn't tell it was the rind.
