... for the idea of putting quinoa into a nut roast! :hugish:

I've now made a version of this twice in a week and it's absolutely wonderful.

Here's what I do:

Take 100g of quinoa (I'm using red, but I'm sure any will be fine), and cook it in 200g water until all the water has been absorbed. Add a vegetable stock cube to the water as it's cooking. While that's cooking, grind 100g of mixed nuts and put them in a bowl. Add 1 tsp ground fenugreek, and the zest of half a lemon.

Fry 1 finely chopped onion and 1 finely chopped stick of celery.

Mix the cooked quinoa and the vegetables into the nut mixture.

Press it into a loaf tin and bake for around 35-40 mins.

Today I made up the same mixture, and used it to make veggie sossie rolls. Just had one as part of dinner, and there's another for lunch tomorrow. Yum.
