Hi Berti,

I would be happy to share the recipe butits quite long.

You need:
1tbs icing sugar,
1tbs cornflower,
veg oil for oiling trays,
gelatine powder 25g (Iused 8 gelatine sheets)
red food colouring,
2 egg whites,
granulated sugar 500g.

rub tins with a bit of oil and sprinkle with sifted icing sugar and corn flower (mix before sifting)
boil kettle 125ml, pour in bowl with gelatine,
stir till dissolved,
add red food colouring (you will need qute a bit),
put granulated sugar in sausepan with 250ml water and heat till sugar is dissolved,
Using a sugar thermometer, heat sugar to 122decrees c
While its doing this whisk the egg whites till stiff,
turn hob of when sugar reaches 122,
gently pour the sugar mixture into the egg whites whisking while you do it (use a food mixer, or another person to whisk while you pour)
add in the gelatine mixture and stir in,
whisk the mixture until really thick so that if you lift up the whisk it should leave a ribbon on tow for a couple of seconds before sinking into the mixture.
This took me a good 20 minutes with a balloon whisk.
pour into trays and leave for a couple of hours to set just on the side, not in the fridge.
When its set cover a butter knife with oil, then more of the icing sugar/corn flower mixture, then cut up the marshmallow in the tray and pull out (I also used a plastic spatular to get it out)
The toss on a chopping board ot in a bowl or on a plate with more of the icing sugar.cornflower mixture. (you will need more that it says at the top, I probably used about four of each)

I wonder if that could be veganised. *looks at hedgewitch*

Maybe agar instead of gelatine. But I can't think of a decent substitute for the egg whites. I know you can get vegan marshmallows so it must be possible!

From what I've read, the best natural substitute for egg whites is, ironically, marshmallow. The plant, not the candy. Other mallows would probably work too.

I have directions in a book somewhere, I'll type it out tomorrow.
(Its midnight here, and I can't find the book in the dark)

Thanks Ellendra,

I have googled it and found a few recipes and might give them a go later. i thought it would be a snow day today but its completely gone and its all sunny now so i have to get on with outdoors jobs instead!

If any vegans are interested in the recipes I found, here is something I found. Not sure what the UK equivalent of corn syrup would be though.

Disaster!!!!!!! complete and utter disaster. :cry: It just wouldn't set. So the second time i used double the quantity and....... a splodgy pink gunky mess.

Any success stories? I'm determined to make them one day!

I found this on the web years ago, never tried it so can't say if it's any good. It says gelatin but was listed as vegan, so I don't know if they have something vegan they call gelatin (US recipe).

Homemade Marshmallows

Makes about 40

Marshmallows were originally made from the root of the
marshmallow plant; today, corn syrup and sugar are the
main ingredients. Homemade ones can be cut into any
shape you like.

2 1/2 tablespoons gelatin

1 1/2 cups granulated sugar

1 cup light corn syrup

1/4 teaspoon salt

2 tablespoons pure vanilla extract

Confectioners' sugar, for dusting

1. Combine gelatinl and 1/2 cup cold water in the bowl of an
electric mixer with whisk attachment. Let stand 30 minutes.

2. Combine granulated sugar, corn syrup, salt, and 1/2 cup
water in a small heavy saucepan; place over low heat, and
stir until sugar has dissolved. Wash down sides of pan with
a wet pastry brush to dissolve sugar crystals.

3. Clip on a candy thermometer; raise heat to high. Cook
syrup without stirring until it reaches 244° (firm-ball
stage). Immediately remove pan from heat.

4. With mixer on low speed, slowly and carefully pour syrup
into the softened gelatin. Increase speed to high; beat
until mixture is very thick and white and has almost
tripled in volume, about 15 minutes. Add vanilla; beat to
incorporate.

5. Generously dust an 8-by-12-inch glass baking pan with
confectioners’ sugar. Pour marshmallow mixture into pan.
Dust top with confectioners’ sugar; wet your hands, and
pat it to smooth. Dust with confectioners’ sugar; let
stand overnight, uncovered, to dry out. Turn out onto a
board; cut marshmallows with a dry hot knife into 1 1/2-
inch squares, and dust with more confectioners' sugar.
