Beetroot soup

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Beetroot soup

I just had this beetroot soup for lunch and it's so nice I had to share it!

4 beetroot
1 daikon radish or 2 small-medium turnips
1 onion
1 leek
vegetable stock - depending how thick you like your soup, between 8 and 10 cups
2 cloves garlic
1 tbsp chives
1 tsp crushed black peppercorns
salt to taste (if desired - I just used a pinch of Lo-Salt for my OH's greater fondness for salty foods)

Fry the onion and leek for 1-2 mins in a tsp of oil
Add chopped garlic and fry for a further minute taking care not to let it burn
Add stock, and chopped beetroot and daikon/turnip
Bring to boil then simmer on low heat for around 2 hours
Add the pepper and chives towards the end of cooking
Process in a blender - yummy served with a swirl of yogurt. Keeps well in the freezer, makes 4-6 servings depending on whether you have an appetite like my OH or something more modest!

Thanks fly, I've just had beetroot in my veg box and I never know what to do with it besides boiling or pickling!

Ooh Penny, there's so much more

Grate it raw and put some sour cream on it. It's very pink!
Grate it and mix it with red cabbage and red onion and vinaigrette made with red wine vinegar for ruby coleslaw.
Grate it with potato and carrot and fry like rosti.
Roast it whole or pieces with other root veg.
