Hi,
Recently I tried to make frozen chips as we had a load of potatoes we weren't going to use, so I cut them up, rinsed them and coated them with oil before freezing them... we just cooked them for dinner (in the oven) and they were foul!! Tasted like a mixture of a swimming pool & the sea (according to my OH) I just thought they tasted manky!
So what did I do wrong?? I would like to be able to freeze potatoes as we frequently buy a 5kg bag and don't always use them all.... plus I may have gone a little mad with potato plants this year (assuming they all grow)
Please help
Clari - very frustrated and hungry (waiting for some 'fresh' chips to cook)

I'm pretty sure you have to blanch them first before freezing. This is something I want to do too, so I'll be watching this topic with interest

Re: Making "Frozen" Oven Chips
The way to make frozen chips for oven chips or otherwise is to flash fry them until soft but not coloured, let cool and then freeze. I used to have to do this when I worked as a chef at a Spanish Catholic Conference Centre in Cheshire.
I know the frying thing comes as a shock to those who think oven chips are healthier but it is also true of the likes of breaded or battered fish and all manner of other oven bake-able things.
Yes, yes I know it's amusing me working with nuns

Re: Making "Frozen" Oven Chips
As I recall..... what you need to do is parboil or par-fry your chips and then freeze them.
When you cook them, if you've parboiled, you'll need to drizzle them with oilve oil & turn them to coat them - keep turning as they cook & they should be fine.
When you buy your spuds, try & keep in a paper bag, not a plastic one... then store somewhere cold & dark - they'll keep longer that way in the first place

Thanks all for the replies, at least now I know what I did wrong...
But our potatoes are always in paper sacks (5kg for £6 from the garden centre) and live in the out house so are fairly cool... we just don't always use them that fast
But I'll know how to do it next time. You guys are a wealth of knowledge
