I was lucky enough to be sent the BBC Good Food 101 Healthy Eats book recently and I've just made my first recipe from it!
Butterbean and Squash Crumble
Sautee 2 onions and 4 cloves garlic in 2 tbsp oil until golden.
Add 1 jar passata, 3/4 pt veg stock, salt pepper and smalll amount chilli powder (to personal taste) and bring to the boil.
Reduce heat and simmer uncovered for about 20 mins until a bit reduced.
Add 1lb 9oz chopped butternut squash and cook for about 20 more mins - until the squash is cooked thru but still holds it's shape.
Add 1 tin butterbeans and cook for a bit longer until it's as reduced as you want it.
Meanwhile make the topping with
2oz bread crumbs
1 oz walnuts finely chopped
1 tbsp chopped rosemary
4 tbsp parsley
Sprinkle over the top of the squash etc and pop under the grill until golden
It's really tasty and pretty much stuff you'd have in the cupboard - or near enough!
It also seems like the kind of recipe that can be adapted to suit what you have available and added to!

That sounds fantastic and it incorporates two of my favourite things, Butternut Squash and Butterbeans... Hmmm... dinner tomorrow might not be was OH was expecting

I love savoury crumbles... mine usually have a variety of root veg in. Never put beans in before - that's a good idea!
