You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Bananas

I have been going through a baking phase lately. I made lemon squares last weekend because I bought lemons (which are currently in season and smelled so good) and got home and had to find a lemon square recipe. They turned out o.k but I over cooked them. Anyway, I also bought some bananas that rippened too quickly for me to consume, so last night I made banana bread. It smelled good so I brought one loaf into work and it was a success. Phew! The last time I made it, it was as hard as a brick on the outside and gooey and gross on the inside. Anywho, I have batter for a second loaf, which I will put in tonight and top with an icing. However, I was curious does anyone have any other ideas of what to do with ripe banana's? I have to buy bananas weekly as I am one medication that depletes potasium, so other ideas of what to do with them would be appreciated.

You could dehydrate banana slices and eat them in your muesli...

Or mash them and dehydrate them into a fruit leather. Perhaps combined with apple? Else it will be very sweet.

See if you can track down a supply of banana chips - they are lovely.

Banana milkshake made with b. milk, and egg, + a hand full of berries or what ever else floats your boat is a great way to start the day.

I'm also fond of frozen bananas

I make banana bread but instead of making one large loaf I make it into buns and freeze them, taking them out as needed

My favourite sandwich filling is banana and Branston pickle, and it's even better on digestive biscuits than in bread! :mrgreen:

Oooh this is a goody...

Sugar Free Date n Banana Cookies

3 Large bananas
1 cup chopped dates
2 Cups Oats
1/3 cup cooking oil (I use sunflower, dont use anything strong like olive)
1 tsp vanilla extract (not compulsory)

Preheat oven to 180/Gas 4
In a large bowl squish the bananas through your hands till all mushy (very therapeutic that bit) or you could be dull and mash with a fork. Stir in all the rest and the recipe says to let it stand for 15 mins (ive never doen that)
Drop desert spoons of the mixture onto a greased baking tray & bake for 20 mins till brown.

I usually dollop it into a flapjack tray and then cut it into squares when out of the oven

It is a great way to use up bananas that have gone past it

Lots of great ideas here, guys. I never would of though to freeze or dehydrate my banana's--even though I buy banana chips and cereals with bananas in them--gesh, I am such a consumer! :oops:

I absolutely love bananas dehydrated till they are still just soft and squidgy.
They look black and disgusting but taste out of this world. :cheers:

Aha I knew it another weirdo! My family think I am obscene for liking banana and marmite sandwiches but I think banana and branston sounds weirder - must give it a try sometime and gross them all out :pukeright:
I personally think that plain Marmite sandwiches are gross, let alone sacrifice a perfectly good banana .... sacrilege. :munky2:

Oh yuk banana and marmite sounds revolting :lol: (though I might give it a try just to see my OH's face!). The sour tanginess of Branston complements the sweetness of banana - I don't actually like B. pickle very much with cheese or anything else!

I have just tried it. First of all I get sweet and salty together as would be expected, but then a slightly unpleasant bitterness comes through that I've never noticed with marmite before. I don't like it :( But at least I tried. :mrgreen:
