Lincoln Sausages

what are lincoln sausages? not the same as the kids lincoln logs i hope :tongue: just kidding, the lincoln logs are made of wood no spices required :mrgreen: but really, what are lincoln sausages?

They are a variety of british style sausage with mystery herbs!

found a reciepe for lincoln sausages at : www.greatbritishkitchen.co.uk :study: the herb they use is SAGE. sounds really good.

SAGE, that's it in my opinion as the son of an old Lincolnshire butcher!
There were some secrets, such things as how long it was mixed (by hand), and how long the mixture stood before stuffing! :scratch:

my mate has a butchers shop here in Lincolnshire when I had a go he gave me the rusk to put in with my meat

Before the days of rusk it used to be stale bread!
If I make sausages with my Lidl machine, I always save some home made bread for a few days. :iconbiggrin:
