Minnesota, you've made this all look so interesting and have-a-go-ish that I feel you're now duty-bound to give us all a very detailed, step-by-step course on applejack manufacture.
Prepare a bucket of ice water in which to dunk your feet, my man, and get typing. We need teensy little steps, all explained.

thank you so much for the info, i'll look into that. Basically, applejack is kind of like apple schnapps, but much more tart. I have fermented the apple cider and now am concentrating it by removing the water content by freezing the water and straining out the non-frozen non-water.

but basically, the only recipe I started with was:
1. Ferment Apple Cider til it is dry, bulk age til coldest part of winter, (the last freeze will need to be about -20 deg F or colder.)
2. add some unfermented Apple cider right at time of freezing (at a rate of 1 gallon to 5 gallons)
3. Freeze in container you can easily strain (I like glass carboys, as in my photos)...be sure the container isn't full, Ice will expand and break your container, half full is best
4. once frozen solid, Let thaw for 30 minutes or so, then strain.
5. take the strainings and go back to step 3.
it will need to be frozen about 5 or 6 times.
each time the frozen cider will be less solid, because
there is less water. the end result will be a reduction of 10 gallons
down to 1 gallon. sometimes I don't reduce it that far,
I go by taste....10 to 2 is pretty tasty.
once reduced it should be aged for a few months
then can be bottled without fear of carbinating into bottle booms.
OK,
some weeks ago, I filtered the last 1.5 gallons with charcoal as shown in the first photo. I did this twice, and the also filtered through a coffee filter. there still seemed like there was dark particals, so I let it sit and settle til today. I bottled today as shown in the bottom photo.
