old fashioned icing

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

old fashioned icing

Post: # 180942Post indy »

Those of you that remember will know that I proudly made 8 christmas cakes back in october..now those that were ordered from me had that awful sugar paste icing on that rattles my teeth :shaking: by request of the customers. I like good old fashioned traditional icing on mine and make it look like snow but have lost my gran's recipe (which am really upset about) its made with icing sugar, water and I think egg whites. Would anybody know of a similar recipe??? Thank you :santa:

Yikes, I best start cracking open almonds for marzipan now if I'm going to have enough time to ice ours. Googling royal icing recipes should see you right.

I used to make royal icing (I have no idea what is this fondant icing that TV cooks keep talking about these days) and it was sometimes rock hard. I think the trick was to add a few drops of glycerine (check this though before using as it was a LONG time ago  ). You also add a drop of blue colouring because it makes it extra white!

Susie,

Your cakes look fab! Not a bit amateurish at all. :santa:

I am sure they will be enjoyed and add to the festivities.

Merry Christmas,
Martina
