Goose fat

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Goose fat

Post: # 181616Post Milims »

We had goose for christmas dinner and, having roasted potatos and parsnips in it, we are still left with quite a bit. I don't really want to throw it out as it gives such a lovely flavour, but how do I prevent it from going off?

Don't worry milims. I've had it in the fridge for a year and it hasn't gone off. I keep it in a kilner jar.

You can still have roasties for months to come.

And it will keep OK as long as that grungy, jelly-like bit at the bottom never gets exposed to the air. THAT bit will happily go off, given half a chance.

Experience, you see ...

OH ... "I thought you said goose fat keeps for ever".
ME ... "It does".
OH ... "Then why does this bit have hair?".

Ah - I took the jelly stuff out as stock  So I've put the rest in a jug in the fridge. Looking forward to lots of roasties!
