Absolutely nothing wrong with the recipe - but I'd be far from happy about leaving a wide-mouthed bowl like that filled with an unfermentable liquid with just a loose cover for a week. I can't see anything to argue against putting the whole lot into a loosely capped bottle of some description, which would be a surer safeguard against the more adventurous creepy-crawlies.
