I'm new to this site and have really enjoyed reading up about everything. Although I am a little worried about the 7 litres of elderflower cordial exploding in the bottles I didn't steralise today. They are in the fridge but I'm not feeling so pleased with myself now!

Welcome Nic! Consider removing bottles from the fridge, loosening lids and bringing to boiling temp in a pot of water on the stove then reseal and let cool - should solve your problem - pasturisation - does wonders :-)

Well, no explosions as yet. The first batch tastes really lovely but has a sediment that looks a bit like a jelly fish floating in the middle of the bottles (it isn't putting anyone off anyway). The second batch is much clearer for some reason. I've made a load from red elder which has produced a really lovely raspberry coloured cordial. I'm starting to feel a lot braver so intend to have a go at making some elderflower champagne this week. Need to swot up on it.
