We do have a couple using the site - they are registered separately but as Contadino and Contadina, which I think does confuse some people! :iconbiggrin:

If I say so myself, a blimming lovely chicken corma (but using cheap cuts of chicken) and sag aloo (but using kale instead of spinach...worked fine).

And some homemade roti flat bread - very quick and easy and the first time I have made it.

I had a using up the left overs day. Dinner was leftover lasagne, with leftover pancakes with Strawberry puree. I made a veggie soup with everything that was going over in the fridge. Also Butternut squash and sweet pot puree for the baby when we start weaning.
Stay at home Mummy to Orin 8, Trixie 6 and Temogen 4 . Also three Chickens Dottie, Poppy and Dr Mumbo. Three cats called Flossie and Pickle and Lexi.

A gorgeous pasta sauce made of tomatoes, peppers, courgettes, onion, garlic, aubergine and herbs, roasted in oil and balsamic vinegar, then stuck in a blender to make it smooth. Made from big bags of cheap vegetables that I used to get from my local fruit and veg market until t*sco opened just opposite and out it out of business. This was my last one sadly (made enough for several portions to freeze). Hope I can recreate it, it was really good. And with bacon on top, as a treat. Don't eat much meat these days!

On my night shift last night I made carrot, asparagus and kidney bean burritos - one of my all time favourites.
This evening I made broccoli and spinach pasta which was delicious, and now I have some lemon bars in the oven, about to come out. Tomorrow the cooking plan is spanokopita (DELICIOUS!), cheesymite scrolls and possibly some "pizza rolls" if I can be bothered. My motorbike has broken down so I am staying with the in-laws for the week and so will need to be bringing my week's lunches with me... I don't like to ask to use their kitchen, especially as I'll be needing it late at night (bloody shift work!), but at least I get to have a bake a thon tomorrow!

today although the weather is nice we are having stew and dumplings even though the weather is nice, and we cheat, to save pennies we get a piece of brisket and cut that up.£3 for the meat feeds us all and left overs.
Mushrooms are from the bags of compost got free from the mushroom farm, the onions fell of the back of the tractor we were following, peas we have bought ,carrots we grew then we blanched last summer then froze pots we grew.

For lunch today we had Ground Elder pancakes. No photo, I'm afraid, we got stuck in straight away :lol: . Served them with a simple salsa - avocado, red onions and tomato in oil and lemon juice.

The recipe - I made it up as I went along, so it's good to write it down as it's definitely worth repeating :lol:

a small bunch of freshly picked ground elder tips
1 small onion, finely chopped
butter and oil, generous amount for frying veg
1 cup wholemeal flour
1/2 cup gram flour
level tsp baking powder
1 tsp caraway seeds
salt and pepper
Water, to mix to batter consistency with a splash of vinegar

Fry the onion gently in the butter and oil
Chop the ground elder and add to the pan to wilt.
Mix all the dry ingredients and add the onion/greens mixture.
Whisk in enough water to make a pancake batter consistency.
Fry as you would pancakes.

Tip: Make small pancakes - I tried making normal sized ones but they kept breaking up. When I made them smaller they held together beautifully.

Yummy!!!

Edited to add my thanks to Pelmetman for reminding me the ground elder was sprouting beautifully in the garden :lol:

What does ground elder taste like I wonder? Had a whole lawn of it a few years ago and no compost bin to put it in. If only I'd known I could eat it! :lol: Though I was sending it so many bad vibes it probably wouldn't have been very kind to me if I'd eaten it :shock:

Even if I do say so myself a blooming lovely pork belly casserole with haricot beans, was in the rayburn for 24 hours and was heaven on earth. With nutmeggy mash. The bit of pork only cost me £4 from the butchers and I had the rest in my store cupboard. It fed 2 people enormous portions last night and have got as much again for tonight :cheers:

Nettle and walnut pesto with pasta and strips of toasted aubergine, onion and pepper.
Also this week, home made chapattis wrapped round creamed nettle mixed with onion and brown rice (we've been making nettle beer and didn't want to throw away the nettles after steeping).
