Just seen this, thank you, will be trying this later, do you think I can use the apple wine that hasturned itself to vinegar instead of balsamic?

I've no idea Becks, but I'd have thought it would change the taste quite a lot, unless your wine/vinegar has that sweet mild taste that balsamic has.

I have cut and pasted this superb recipe in my recipe corner. I am sure to do this for Christmas as for the past few years I gave green tomato chutney to everybody for Xmas, that will make a change...

Lovely recipe thanks.
I made some mashed potato mixed with a little grated cheese and coriander and added this to it and filled jacket spuds with them, absolutely fantastic - thankyou xx

I have just bought the balsamic vinegar - not cheap though :roll: and it doesn't even say it's aged, it's just extremely bog standard supermarket stuff so hope it will be OK!

OK as a warning to anyone who hasn't made it yet - you will STINK and so will your house - only I didn't notice until later even though my husband was dropping hints every time he wandered through the kitchen. :lol: House and I still stink this morning!

As the recipe was vague I used 4kg red onions and 0.5 litre of balsamic vinegar with a big mug of sugar and then a little bit more. However as my nose had completely stopped working by the time this had cooked (1 hour with lid on, 30 mins without) I expect my taste buds were shot too so have no idea what this is really going to taste like!!!

Also another warning mine filled 5 x 0.75 litre Le Parfait clip top jars and another 1 and a 1/2 regular jam jars. :shock: :shock: :shock:

Its so great we have eaten two of the 6 jars I made for Christmas already! Got onions for 20p a llb and balsamic for a quid thank heavens. Only took a week for the niff to die down the cats are speaking to us again. Great recipe thanks for sharing1

I'm not impressed by it. But the recipe was so vague - no idea how much vinegar to use for example and I did let it cook until most of the vinegar had simmered away as she said, but it's too dry and insipid and has already shrunk back inside the jars by about an inch. That's a huge amount of onions and expensive vinegar wasted. :roll:

You had to keep checking it like when making jam because different onions have varying amounts of water. Especially at this time of year. Sounds like it was overcooked. I got my Balsamic from Aldi it was E1.25 they have three different kinds but I don't know if they sell it in France so cheaply.Perhaps E.Leclerc'? We have them in Slovenia and they are pretty good for some things like Sharwoods hot curry paste and Tahini. The pong was prety epic though, it kept hitting us like a wall when we came in from work!
