Meatloaf Recipes
Does anyone have a recipe for meatloaf... after many years of thinking I didn't like it I decided to order some when out with Jo a couple of weeks ago... it was lovely... bacony but oversalted...
I'd love to make one with really good ingredients... I bet it will taste a hundred percent better than the one I tried.

I adore meatloaf - but I tend to just make them up as I go along. I make them with mince or chicken or meatless. I think I liked the meatless one best!
However I'll flag this thread because I'm always interested in new recipes. And of course, a meat or meatless loaf should be served with a nice fresh tomato sauce or a barbecue sauce (homemade as well of course).

Ingredients
Mix the minced steak and bacon with the breadcrumbs, then thoroughly mix in the egg.
Add the herbs and spices, then season to taste (more pepper, less salt IMO) and mix thoroughly.
Grease a 1-pin pudding basin, fill with the mixture, cover with foil and place in a large saucepan.
Pour in enough water to come two-thirds of the way up the basin and put the lid on the saucepan.
Bring to a rolling boil on the cooker and steam for three hours. Keep a kettle of hot water to hand and periodically top up the water level.
Another old-fashioned but good one is jellied beef.
- 8oz bacon
8oz steak (rump is good, but I've also used chuck and blade)
4oz breadcrumbs
1 egg, whisked
1/2 tsp mace
1/2 tsp allspice
1/2 tsp thyme
Salt and pepper

I'm a bit late, I know, but I've just found where I'd hidden my book containing my favourite meatloaf recipe. It is based on the Shirley Goode books. Anyone know what happened to Shirley? She was very popular for about 10 years and then dropped out of sight. She is a lady who doesn't like parting with money unnecessarily but likes good food, preferably homemade.
I've made this recipe with both pork and beef mince and it is good either way. I've also made this loaf with a little bit of minced bacon in it. It is good served hot with potatoes and veg or cold with salad. Any remaining leftovers make a very tasty sandwich to take to work, too. And if we've had too many bills that month, an extra slice of crumbed bread and an extra egg mixed in will stretch the loaf to an extra couple of helpings..... There is no salt or pepper in the recipe so you can add that if you like it.
Glazed Meat Loaf
1 apple, peeled, cored and grated
8 oz minced beef (or pork)
2 slices wholemeal bread, crumbed
1 onion, peeled and grated
1 large carrot, well scrubbed (or peeled) and grated
1 tablespoon brown sauce (spicy, fruity or bbq)
1 egg, beaten
1 dessertsp tomato puree
1 heaped teasp honey
Mix together apple, carrot, mince, breadcrumbs, onion and brown sauce. Stir in egg and mix everything really thoroughly. Press into loaf tin. Blend together the honey and tomato puree and spread over meat mixture. Cook at gas mark 3, 325'F, 170@C for one hour and then cover with foil, turn out the heat and leave in oven for a further 15 minutes.
Enjoy!

ps My granny used to make a meatloaf that was very similar to Stonehead's recipe. Visiting her when she had made this for dinner is one of my childhood memories.

I'm sure it will taste twice as good(e) - I hadn't spotted your post until today - thanks for posting the recipe. I'll give it a whirl - perhaps even do a meatloaf for supper tonight.

Another Meatloaf recipe. Good for using up HM Apple sauce
Pork and apple Meatloaf
2lbs pork mince
1/2 cup finely chopped onion
1 egg, beaten
3/4 cup applesauce
3/4 cup of grated carrot
1 stick of celery finely chopped
1 cup bread crumbs
3 tablespoons ketchup
1 1/2 teaspoons salt
1/4 teaspoon black pepper
handful of fresh chopped herbs (try a mix of lemon thyme, rosemary and sage)
PREPARATION:
Preheat oven to 350°. Lightly grease a 9x5x3-inch loaf pan.
In a large bowl, combine all ingredients; mix well.
Pat the meatloaf mixture into the prepared pan.
Bake for 1 1/2 to 2 hours.
Let cool 10 minutes; remove to a platter and slice.
Serves 6 to 8.

No recipe, sorry, I just make things up! I put in things like chestnuts, cracked wheat, and breadcrumbs to make up the bulk and chopped sweated onions and other veg like peppers, leeks or courgettes then mix up with an egg. It doesn't hold together when sliced like a meatloaf but we don't care - it all goes down the same way!
