Anyone got a good recipe to share ? Last time I made it, it was way too sweet.

Stick up the recipe you used, Sarah, and I'll adjust it for you.

Rhubarb wine is ridiculously easy as the recipe consists of rhubarb, sugar , water and very little else. What you do have to be careful of, though, is old recipes (or even misprinted ones) and weak yeast. Do you want a light, dry, crisp wine, or do you want a heavy, rich dessert wine? You can make those or anything in-between with rhubarb.

Just as a guide, 1.5 kilos of rhubarb and 1 kilo of sugar will give you that light, crisp one. I have one on the go at the moment with almost 3 kilos of rhubarb and knocking on 2 kilos of sugar - but that one needs a really good yeast to avoid ending up sickly-sweet.

Your ' light & crisp' rhubarb wine sounds intriguing...

Would you recommend the sugar juice extraction method?

last year I made rhubarb and ginger wine, and it turned out to be the best wine I've ever made.
Global average carbon emissions - one ton per person per year.
Current emissions in UK – 9 tons per person per year!
