Cheese Wafers

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Cheese Wafers

Just found a recipe book that I used to have as an 11 year old. Sainsuburys vegetarian meals by rosamond richardson. here is my favorite recipe from it.

Cheese wafers

4oz (100 g) Cheddar cheese grated
4oz (100 g) butter, softened.
3oz (75 g) plain flour, sifted
seasoning

mix ingredients together until well blended. place grape sized little bals of the mixture on a greased baking sheet and flatten them down. Bake for 10-15 mins at gas mark 7/425 f/220c until golden.

Just made some and I must point out that you should try and keep them quite thick as you end up with cheese sruble otherwise.

Hello-- I haven't made these for awhile, but they are a favorite. Like to have them with a cup of English Breakfast or a glass of wine. To accompany latter, try adding a little snipped fresh sage. Sage just seems to love Cheddar. Sometimes, I also make Sesame Cheese wafers as an appetizer for potlucks, easy and good. Use your basic recipe, but flatten the cheese balls with 2 fingers after you put them on the baking sheet, then sprinkle them generously with lightly toasted sesame seeds. It gives them such a good "nutty" taste....
