Grapes, grapes, EVERYWHERE!!!

Every year our old grape vine produces kilos of rose coloured grapes... they taste slightly bitter and 'earthy' when ripe, so def not a desert grape.
This year is no exception and the pergola is groaning under the weight. The chooks have found they can jump up and grab the lower bunches (they pig out on my figs from the tree's lower brances too

Firstly, I considered the obvious, wine.

I can't find a wine recipe on the net that sounds convincingly like it'll work for grapes though, most grape wines say get concentrate.
Secondly, I thought, Ah-haa - Grape jelly!
If you can get such a thing and if so how you would make it, I don't know (besides which I think the bulk I have would rule it out as being useful!
My lot don't eat blackcurrents, don't like jam or cooked fruit and chutney and so I've got about 6 bottles of last year's Creme de Cassis sitting idle as nobody will drink that either


BRAMLEYS: probably around a tonne - well, loads. We're only just getting around to eating the very last of last year's apple sauce so will make more and freeze it. We have at least 4 times the amount of last years harvest though... any ideas for keeping/storing them for a non jam eating household?
Desert apples: Not such a biggie, we eat a few and I'll keep some for my horse in the winter... I would appreciate good ideas to store them as my attempts last year were futile. Placed on a wooden rack, not touching in cool, dry shed.
Finally PEARS
