How much sugar?

Hi, I have been reading the Scrumpy recipe @ http://www.selfsufficientish.com/scrumpycider.htm

It says to add the sugar but doesn't say how much in the ingredients; unless I'm not reading it correctly.

I really fancy having a go at this and would be grateful if someone could give me a hint as to the quantity required.
