Without going into detail there's a great book called preserved. It has good diagrams for hot and cold smokers, and also all the recipes you'll need for them. Well recommended.

It's around £10, I'm writing this at work, one review says it doesn't go into much detail, but i'm sure it does from memory
It's not easy being Cheezy
So you know how great Salsify is as a veg, what about Cavero Nero,great leaves all through the winter , then in Spring sprouting broccolli like flowers! Takes up half as much room as broccolli
