Mock nut roast
I remember working in a pub a decade or so ago, and there was a chef who used to make the most gorgeous nut roasts. But, they weren't proper nut roasts, they were mock nut roasts:
1 packet sage and onion stuffing
Handful of walnuts
handful of almonds
handful of hazelnuts
handful of peanuts
2 eggs
good handful mixed seeds (i like sunflower, pumpkin and pine nuts)
*optional* Mushrooms -as many as you can fit in! Yummy!
Mix the stuffing mix and add some more water. you want it slightl more sloppy than normal.
Leave to cool
Add nuts, seeds and mushrooms and stir thoroughly.
Beat eggs together and add to mixture.
Stir.
Cook in a loaf tin in the oven for about 3/4 hour, or until set well. It should be brownish on top (if you're putting it in the top of the oven, over it in foil to stop the top burning), and feel fairly solid to the touch.
If you're lucky, you can slice it. I always end up doing something wrong and having a lump!

I serve mine with all the roast dinner trimmings egOkay, as an American I have to ask - how do you eat a nut roast? Is it served as an entree? Side dish? With gravy? Never heard of nut roast before

I'm writing that recipe down - :)
it's very like the extended meat loaf that I make in times of not-much-money (first one was when I had 1/4 lb mince and a sausage for the weekend)
Same sort of thing but whatever meat you have instead of the nuts, and oatmeal or porage oats added if you have more folks to feed

that first recipe is about how i make mine!!!
only i also add various grated root veg with most of the water squeezed out, and an onion. I am a biiiiig meat eater but i like nut roast as a stuffing, and also it's good in sandwiches cold the next day with salad and mayo. especially good with a bit of ham too, but then you kind of defeat the object lol!
