Ciabatta Recipe

So, brief analysis of our weekly shopping list has revealed that Ciabatta is ridiculously expensive and seeing as OH has identified that I currently waste my evenings relaxing, it's been decided that I could more usefully learn how to make this!

Does anyone have a good recipe? Is it easy? I seem to have read somewhere that it's more of a sloppy doughy mess than your usual bread, so any tips would be great!

I make something akin to ciabatta with normal dough made with olive oil that has enjoyed its first rise in the fridge overnight. When you come to shape the loaf make it elongated and flatten it some. Then put it in a tray with a generous amount of olive oil. Ensuing that all the dough (on all sides) is well covered in oil. Leave to rise and then bake as normal.
