I would like to see oregano for the herb one of the popular ones that you haven't covered yet. The vegetable could be peas, I have not seen that on the front page. You could have a recipe for pea pod wine perhaps?

what about parsnips , mainly because I love them and want to grow them and I am told it'd difficult and takes ages and the roots fork

Just give them a try. don't be put off. I sow them in May,and just forget about them. they tend to be slow to germinate.Then when they've germinated, a little thinning then forget about them again until about August,then pull one up to see how they're doing,you'll be pleasantly surprised.Don't worry about forked roots,they still make good eating,unless your thinking of selling them to Marks and Spencers, hehe.
