suet assistance

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

suet assistance

We have been lucky enough to have been given a huge(most of a cows worth) and now have the dilemma of how to store it.Does it freeze-and if so grated or whole;is it fine in the fridge;does it need drying or do we have to live on suet pudding and spotted dick for the next two months.
As an aside,we were given it by our butcher who said that he doesn't have to pay for suet,just has to order it from the abattior.Might be worth asking if (like me ) the option of living on suet pudding would be most favourable(not so popular with OH and sprogs).

You should freeze it, it won't last a more than a few days in the fridge. At a guess I would say pre-grate it, and the Nigella in me would suggest looking at the recipes that you are likely to use it for and bag it (and label it) in those amounts before freezing. Don't forget haggis...and you really ought to be making your christmas pud now!

i know it seems to be sold 'dry' in shops - but the suet we got from our lamb was a tad bloody.. so we grated it first then froze it.

good for dumplings.. mincemeat.. suet pastry for S&K pudding...
