I have a lemon tree in my garden and it's laden with fruit at the moment, we tend to have fruit all year round which is great. The lemons are huge and at the same time as we have fruit we also have loads of flowers.
So whilst I have a glut of lemons and I seem to have rather a lot of eggs I made some Lemon curd, it's called lemon honey here in NZ.
my OH makes Lemon honey but it nether lasts very long in our house

Its great on toast in the morning or add a little gelatin and put into bases made of sweet pastry for a nice treat especially if you drizzle dark chocolate on top

OH will be jealous, our lemon trees not big enough to strat fruiting yet, and as for chocolate its a staple part of any good diet, around here we call it sanity. as that's what it takes to recover after putting the kids to bed

I'm sure when I was in NZ it was called Lemon Cheese (or was it lemon butter?) I am confused now but I have never heard of lemon honey before, so maybe the oldies in NZ call it something else? Anyway doesn't matter, it looks really lovely! I have never dared make any because I just know it would curdle - I can't make custard or hollandaise or anything like that!
Was thinking, would it work ok just using the lemon juice and not the rind? Could I use the rind for a lovely limoncello and the juice for fabby lemon curd?
