Elderberries......does anyone have any good recipes?

Post: # 203954Post Nix »

I've been given a recipe for Eldreberry tincture. Wondered if anyone could recommend any other good things to do with them? The pic below is of my second batch of Elderflower cordial (pic attached), I never worked out why a jelly fish like matter appeared in the first but we drank it anyway. It was lovely.
The pink cordial was made with black elder but I've been told I mustn't use it's berries????

Elderberry jelly but not 'neat' as it is very strong, half and half with apple or what I did last year - 1/3 each apple, redcurrant and elderberry.

Also I freeze small quantities of berries in little pots and add to a crumble, they really add a lovely flavour and colour to it - much nicer than blackberries IMO as you don't get the hard centres!

I've never tried making cordial but I guess that would be quite nice too.
