Kefir cheese

Ta da! Made my first kefir cream cheese. It's very good 'though I say it myself! Picture kefir grains & kefir in progress with my first cheese. Also made a tiny amount of riccotta with the whey.

Fabulous isn't it. I also use kefir as a starter for making a feta-type cheese and that's absolutely delicious too. I used it to make a harder cheddar-type cheese but, although tasty, it wasn't brilliant - didn't melt.

Wow this is brilliant. I got some kefir grains years ago but could never make them work, must have done it all wrong. Sorry to be ignorant, but how do you do this, I have access to unpasteurised milk and I want to have a go at making things with it, must get some more grains

Oh you've just reminded me iv not pasteurized the milk from this morning, better get it on.

What's kefir cheese? I'm interested. How do you make it and what's it taste like? I sometimes make simple cheese just by adding lemon or vinegar to boiled milk. It's alright but very bland and needs lots of salt and herbs or whatever to flavor it. I want to have a go at making hard cheese, mainly cheddar as they don't have it here and the 'yellow' cheese they have is disgusting, like cheep horrible processed cheese. I'd also like to have a go at mozzarella and parmesan.
